This Zamorano Cheese cured no less than eleven months gets Spanish denomination of “Añejo”. It is elaborated with raw sheep milk, has a natural rind smeared with EVOO and is cured in the family cellar since the third month of elaboration.
Lácteas Zamoro is a family artisan business that takes its name from its founder, Juan Uña Prieto. With almost 25 years of experience, they are focused on modernization, innovation, efficiency and quality, including several veterinaries that take care of origin, health and feed of the sheeps. Their artisan method includes a maximum temperature of 36 celsius to get natural bacteria instead of any additives. Thus they won Gold award at the World Cheese Awards in 2023.
HOW TO ENJOY
Store in a cool (fridge 6 to 9 Celsius), dry place away from light and heat. Take it out from the fridge 60 minutes before serving. Perfect serving temperature: 22 Celsius. Very good combination with red wines and other cured products such as Acorn Fed 100% Iberico Ham PDO Dehesa de Extremadura. Excellent to enjoy in desserts with products such as quince and other fruit jams.
