Castillo de Canena is one in five biodynamic olive oil producers in the world. Their Biodynamic Picual Extra Virgin Olive Oil (EVOO) is produced according to the highest standards of biodynamic agriculture, a process that seeks harmony and balance between land, plants, animals, and men in a sustainable and integrated cycle which feedback naturally.
Picual is a robust variety and the predominant variety in Jaen. It produces an oil with an intense green fruitiness and bright green colour. On the nose it is very suggestive of green leaves, green tomato and artichoke stalk. On the palate it is very harmonious with balanced bitterness and piquancy, and its slight astringency is reminiscent of persimmon.
HOW TO USE
This oil pairs perfectly with fish or meet tartares, cheese, seafood, cream of vegetable soups, bruschetta and meat. Store in a cool, dry place away from light and heat.

Extraction: maximum of 4 hours after harvesting. Cold pressed with twophased centrifuge
