Meat product obtained after subjecting the hind limbs of the bull to a process of salting, washing, post-salting, smoking (dry oak), curing ripening and aging in a process that takes between 9 and 12 months.

Valdellan is the only cattle ranch in the province of Leon. Located in the 500-hectare Dehesa de Valdellan, the farm combines large meadows and pasture oaks, which serve as shelter and natural refuge for the cattle that graze freely in its enclosures. It also has great orographic conditions, a clean and healthy climate and, above all, abundant water in the form of streams and springs that irrigate and supply its entire extension from north to south.

The Toro Bravo of the Toro de Lidia race is raised in the wild and is the oldest native Spanish breed in the world. Its meat is natural, low in fat and nutritionally healthy due to the special extensive breeding conditions (high physical exercise and abundant intake of green forage), being the most ecological that exists. The cecina, made from bulls not slaughtered in the Bullfighting, is cured naturally and slowly in the clean and healthy air of Leon, combining an exceptional raw material with traditional know-how.

Race: Toro de Lidia 100% certified, sub-race Santacoloma (only 800 bulls worldwide)

Feeding: natural pastures complemented with forage if weather conditions require it (rain scarcity)

Care: free-range

HOW TO ENJOY

Store in a cool, dry place away from light and heat. If sliced, store it in the fridge and take it out 2 hours before serving. Perfect serving temperature: 22 Celsius.

INGREDIENTS AND CHARACTERISTICS

Ingredients: bull meat, sea salt and smoke.

Colour: shades from cherry to maroon and a slight veining that gives it a characteristic juiciness in combination with white fat.

Flavour and Aroma: with a powerful flavour, it is a product traditionally made with 100% top quality raw materials and characterized by its texture.

Fat: white coloured with firm texture.
